4 Cucumbers
2 Green Onions, sliced
1/2 Red Onion, sliced thin
1/2 cup Cilantro, chopped
1/2 Cup Peanuts
2 tbsp Mint, minced
Dash Red Pepper Flakes (if you like a little spicy)
- Sauce
3 tbsp Lime Juice (I use three limes)
1 tbsp Soy Sauce
2 tbsp Sesame Oil
2 tbsp Rice Vinegar
2 tbsp Honey
1 tbsp Garlic, mined
Directions
- Prepare sauce and set aside.
- Peel, remove the seeds, and chop the cucumbers. Prepare the rest of the veggies and herbs.
- Place all veggies and herbs in a bowl and sprinkle a dash of red pepper flakes. Pour sauce over veggies and enjoy!
