Ingredients

  • 4 Cucumbers

  • 2 Green Onions, sliced

  • 1/2 Red Onion, sliced thin

  • 1/2 cup Cilantro, chopped

  • 1/2 Cup Peanuts

  • 2 tbsp Mint, minced

  • Dash Red Pepper Flakes (if you like a little spicy)

  • Sauce
  • 3 tbsp Lime Juice (I use three limes)

  • 1 tbsp Soy Sauce

  • 2 tbsp Sesame Oil

  • 2 tbsp Rice Vinegar

  • 2 tbsp Honey

  • 1 tbsp Garlic, mined

Directions

  • Prepare sauce and set aside.
  • Peel, remove the seeds, and chop the cucumbers. Prepare the rest of the veggies and herbs.
  • Place all veggies and herbs in a bowl and sprinkle a dash of red pepper flakes. Pour sauce over veggies and enjoy!
